Francesco Elmi, an established pastry chef from Bologna and owner of Pasticceria Regina di Quadri, was born in Bologna in 1970 and discovered his passion for sweets as a child; a passion that would soon become an established profession. His career began very young, in 1986, at Pasticceria Calderoni in Bologna. Thanks to his perseverance and great determination, he enriched his training by working with several other companies in Bologna and since 1999 he began to provide advice to large industrial companies in the sector (Fabbri 1905, Carpigiani, Italia Zuccheri, Granarolo) which led him to travel all over the world and become a reference point in international trade fairs of primary importance, but also coordinator of several courses and teacher. 2010 marks his entrance as Master Confectioner at the Accademia Maestri Pasticcieri Italiani AMPI, a prestigious organization that brings together the best Italian confectioners. In the same year, he opened Regina di Quadri in Bologna, a pastry shop he founded and still manages with success and passion. In 2018, he participates in "Cake Star", a successful television program, where he wins the first prize with his pastry shop that is identified as the best pastry shop in Bologna.
